A Sample Recipe:

Fish Rollups

½ lb. Salmon filet, skinned
1 cup fresh cooked or canned spinach
¼ cup sundried tomatoes, chopped small
1 teaspoon lemon juice
salt & pepper to taste

Preheat over to 400.  Place salmon filet between 2 sheets of wax paper, pound until flattened or use a rolling pin.  Combine spinach, sundried tomatoes, lemon juice, salt and pepper.  Place mixture on salmon filet and roll up.  Place seam side down on sprayed baking pan.  Bake for 15 minutes.  Slice and serve over rice.
